Excited to share with you 3 Weeks of Plant Based Eating. There is nothing I love more than to start the new year with a health goal. Here is the truth…It can feel overwhelming. If I am out and I am starving, I do the best I can. When I’m home, I stick to a plant based diet as much as I can. Starting January 13th, I am just going to do it…starting my 3 weeks of plant based eating.
It’s A Gradual Three Weeks

What does this look like? For the next week, it’s all about prepping. Prepping the mind and the pantry! LOL! I start looking over cookbooks and social media sites for ideas and then create a calendar of meals. Guys…here is the truth…if you are not organized, it’s difficult to follow through. It gets hard trying to think of something last minute and then you are left frustrated with a boring salad and you throw in the towel. Believe me, I know! I have been in your shoes.

Where To Start?
I truly believe the easiest way to start a plant based diet is to gradually add meals to your menu. So, for the first week, we do breakfast plant based meals only. Every morning, you incorporate a plant based meal into your diet. I will add some delicious resources at the bottom of the post that I use as a go to for meal planning!
The second week, we then add lunches in to our day. So every morning, you will have your plant based breakfast and then your plant based lunch. If you are fasting, no worries! Start with your plant based lunches and add the plant based snack as your second week. So easy… If you need two snacks a day while you fast, just add that in as well to your second week of planning.

Lastly, you add in your third week of dinners. Here is the deal…plant based living does not have to be about salads all of the time. I truly make a salad as my starter to my meal now. Get creative! Most recipes can be turned plant based. If it calls for meat, use a substitute or leave it out and add a different source of protein to your meal.
I spoke about different sources of protein in this blog post here! Once you get the hang of adding in your protein, you won’t miss a thing. If I feel like I am not getting in the protein I need that day, I will finish up with a protein drink.

It took several years to truly see the health benefits to my overall numbers. Adopting this plant based life has saved me from a life time of popping pills. I have spoken on my medical background before, so know that this was a decision that I made for me. Everyone has their reasons for wanting to adopt a plant based life style in to their diet. I have not missed out on flavor, creativity in the kitchen or desserts.
Veganism Popularity
We are so fortunate that “veganism” is becoming so adopted. Most stores cater to various types of eating. I am finding it easier and easier to find vegan options when I shop. For example, I have always loved making charcuterie boards, but it was hard to find delicious cheeses. Well, now there is every kind of flavor and plant based cheese to substitute. I make the most delicious cheese boards that are completely plant based and you would not miss the dairy at all!

One of my favorite things to do in the kitchen is to take my old family recipes and see how I can make them Gluten Free and plant based. It took many years to figure out that I didn’t have to eat flavorless food. Adding fresh herbs and homemade sauces (that by the way are not cream based) add SOOO much to a dish. Sometimes I just make it up and hope for the best! 😉
Resources For Your Kitchen

The best way to start, is to look up bloggers and recipes and create your list each week. Creating a menu each day gives you the time to bring in some delicious recipes the whole family will enjoy.
